  • 23 tbsp milk or heavy cream

Instructions

Step 1: Preheat your oven to 175°C (350°F). Grease and flour two 9-inch round cake pans or line with parchment paper for easy removal.

Step 2: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

Step 3: In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3–4 minutes. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined—do not overmix to keep the cake tender.

Step 5: Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 6: For the frosting, beat the butter until creamy. Gradually add powdered sugar, alternating with milk, until the frosting reaches a smooth and spreadable consistency. Add vanilla and mix well.

 

Step 7: Level the cakes if necessary. Place one layer on a serving plate, spread frosting evenly, then top with the second layer. Frost the top and sides of the cake and decorate as desired.

  • Ensure all ingredients are at room temperature to create a smooth, airy batter.
  • Avoid overbaking; the cake should remain moist. Remove from oven as soon as a toothpick comes out clean.
