- 4 large flour tortillas (orange-colored ones work best for effect)
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- Optional fillings: cooked chicken, black beans, sautéed peppers, etc.
- Cooking spray or butter (for frying)
Instructions
- Carve your jack-o-lanterns: Lay two tortillas flat. Using a sharp knife or kitchen scissors, cut out simple jack-o-lantern faces—triangles for eyes, a nose, and a goofy mouth.
- Fill the base: On the two remaining tortillas (the bottoms), sprinkle a generous layer of shredded cheese. Add optional fillings if desired.
- Top it off: Place the face-cut tortillas on top of the cheesy ones, creating a sandwich.
- Cook: Heat a skillet over medium heat. Lightly butter the pan or spray with cooking oil. Cook each quesadilla for 2–3 minutes per side until golden and cheese is melted.
- Serve: Slice and serve warm. Great on their own or with dips like salsa, sour cream, or guacamole.
Notes
- Use orange tortillas (like sun-dried tomato flavor) for a real pumpkin look.
- Cut out faces ahead of time if making for a party—kids can decorate their own.
- Make them mini using smaller tortillas for bite-sized fun.
- Add Halloween colors with black beans, purple cabbage, or green spinach.
- Serve with themed dips like “bloody” salsa or “swamp” guacamole.
