Hot Cheesy Shrimp Dip with Garlic Toast

For the Shrimp Dip

  • 1 lb shrimp, peeled, deveined, and finely chopped

  • 8 oz cream cheese, softened

  • 1 cup shredded mozzarella cheese

  • ½ cup shredded cheddar cheese

  • ¼ cup grated Parmesan cheese

  • ½ cup sour cream or mayonnaise

  • 3 cloves garlic, minced

  • 2 tablespoons butter

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • ¼ teaspoon red pepper flakes (optional)

  • 2 tablespoons chopped green onions or parsley

For the Garlic Toast

  • 1 baguette or Italian bread, sliced

  • 3 tablespoons butter, melted

  • 2 cloves garlic, minced

  • 1 tablespoon chopped parsley


Instructions

Step 1: Prepare the Shrimp

Heat butter in a skillet over medium heat. Add the chopped shrimp, season with salt, pepper, and paprika, and cook for 2–3 minutes until just pink. Add minced garlic and cook for 30 seconds more. Remove from heat and set aside.

Step 2: Make the Cheese Base

In a large bowl, combine softened cream cheese, sour cream (or mayonnaise), mozzarella, cheddar, and Parmesan. Mix until smooth and well combined.

Step 3: Combine Shrimp and Cheese

Fold the cooked shrimp mixture into the cheese base. Add red pepper flakes if using, and stir in green onions or parsley for freshness.

Step 4: Bake the Dip

Preheat the oven to 375°F (190°C). Transfer the shrimp mixture to a greased baking dish. Bake uncovered for 20–25 minutes, or until hot, bubbly, and lightly golden on top.

Step 5: Prepare the Garlic Toast

 

While the dip bakes, mix melted butter with garlic and parsley. Brush onto bread slices and toast in the oven or on a skillet until golden and crisp

Notes

Avoid overcooking the shrimp during the initial sauté. They will finish cooking in the oven, and overcooked shrimp can become rubbery. The goal is tender, juicy bites throughout the dip.
