Crockpot Chicken and Stuffing – Easy Slow Cooker Comfort Dinner

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 box (6 oz) stuffing mix (Stove Top or similar)

  • 1 can (10.5 oz) cream of chicken soup

  • ½ cup sour cream

  • ½ cup chicken broth

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon black pepper

  • ½ teaspoon salt (adjust to taste)

  • 2 tablespoons butter, melted

  • Optional: 1 cup frozen green beans or peas


Instructions

Step 1:

Lightly grease the inside of your crockpot with cooking spray or butter.

Step 2:

Place the chicken breasts in the bottom of the slow cooker. Season with garlic powder, onion powder, salt, and black pepper.

Step 3:

In a bowl, mix cream of chicken soup, sour cream, and chicken broth until smooth. Pour this mixture over the chicken.

Step 4:

In another bowl, combine stuffing mix with melted butter and a few tablespoons of chicken broth to lightly moisten.

Step 5:

 

Spread the stuffing mixture over the chicken and sauce. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender and fully cooked.

Notes

Avoid stirring the casserole during cooking. Let the layers stay intact so the stuffing cooks properly and absorbs the sauce.
