3 ripe bananas, mashed

Instructions
Preheat oven to 350°F (175°C). Grease or line a standard loaf pan with parchment paper.
For best texture, blend the cottage cheese in a blender or food processor until smooth and creamy.
In a large bowl, combine mashed bananas, blended cottage cheese, sugar, honey, eggs, oil, and vanilla extract. Mix until smooth and well combined.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually fold dry ingredients into the wet mixture just until combined. Do not overmix. Fold in nuts or chocolate chips if using.
Pour batter into prepared loaf pan. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes before transferring to a rack.
