Ingredients
For the Chicken:
-
4 boneless, skinless chicken breasts
-
2 tablespoons olive oil
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
½ teaspoon smoked paprika
-
½ teaspoon black pepper
-
½ teaspoon salt
For the Toppings:
-
1 tablespoon butter
-
1 tablespoon olive oil
-
1 medium onion, sliced
-
1½ cups sliced mushrooms
-
2 cloves garlic, minced
-
1 tablespoon Worcestershire sauce
For the Cheese Layer:
-
1 cup shredded Monterey Jack cheese
-
½ cup shredded cheddar cheese
Optional Garnish:
-
chopped parsley
Instructions
Season the chicken breasts with garlic powder, onion powder, paprika, salt, and black pepper.
Heat olive oil in a large skillet over medium heat. Cook the chicken for 6–7 minutes per side until golden and fully cooked. Remove from the skillet and set aside.
In the same skillet, melt butter with olive oil. Add sliced onions and cook for 4–5 minutes until softened.
Add mushrooms and garlic. Cook for another 4–5 minutes until mushrooms are tender and slightly caramelized. Stir in Worcestershire sauce.
Return chicken to the skillet. Top each piece with the mushroom-onion mixture and sprinkle cheese on top. Cover and cook for 2–3 minutes until the cheese melts.
Notes
Pound the chicken breasts to an even thickness before cooking to ensure they cook evenly and remain juicy.
