Chicken, Spinach, and Mushroom Bake – Creamy Healthy Oven Dinner Recipe

  • 2 pounds boneless, skinless chicken breasts or thighs

  • 2 cups fresh mushrooms, sliced

  • 3 cups fresh spinach (or 1½ cups frozen, thawed and drained)

  • 1 cup heavy cream (or half-and-half)

  • ½ cup chicken broth

  • ¾ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon paprika

  • ½ teaspoon black pepper

  • ½ teaspoon salt (adjust to taste)

  • Optional garnish: fresh parsley or basil


Instructions

Step 1:

Preheat the oven to 375°F (190°C). Lightly grease a large baking dish or casserole pan with olive oil.

Step 2:

Season the chicken on both sides with salt, black pepper, paprika, and Italian seasoning. Arrange the chicken in the prepared baking dish.

Step 3:

Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until soft, about 3 minutes. Add garlic and mushrooms, cooking until mushrooms release their moisture and become golden.

Step 4:

Stir spinach into the skillet and cook just until wilted. Add heavy cream and chicken broth, stirring to combine. Simmer for 2–3 minutes, then remove from heat.

Step 5:

 

Pour the creamy spinach and mushroom mixture over the chicken. Sprinkle mozzarella and Parmesan evenly on top. Bake uncovered for 35–40 minutes, or until the chicken is cooked through and the top is bubbly and lightly golden.

Notes

For the juiciest chicken, avoid overbaking. If using thick chicken breasts, pound them slightly for even cooking. Internal temperature should reach 165°F (74°C).
