Ingredients
For the Chicken Scampi:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- ½ cup chicken broth
- ¼ cup fresh lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon red pepper flakes (optional)
- 2 tablespoons chopped parsley
For the Garlic Parmesan Rice:
- 1 ½ cups uncooked white rice
- 3 cups chicken broth
- 2 tablespoons butter
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
Season the chicken with salt, pepper, and paprika.
Heat olive oil in a skillet over medium heat and cook the chicken for 5–6 minutes per side until golden and fully cooked. Remove and set aside.
In the same pan, melt butter and sauté garlic until fragrant.
Add chicken broth, lemon juice, lemon zest, and red pepper flakes. Simmer for 3–5 minutes.
Return the chicken to the pan and spoon the sauce over it. Let it cook for a few minutes to absorb the flavors.
Meanwhile, prepare the rice. In a pot, melt butter and sauté garlic.
Add rice and stir for 1–2 minutes.
Pour in chicken broth, bring to a boil, then reduce heat and simmer until rice is cooked.
Stir in Parmesan cheese, salt, and pepper.
Serve the chicken over the garlic Parmesan rice and spoon extra sauce on top.
Garnish with fresh parsley before serving.
Notes
- Use fresh lemon juice for best flavor
- Do not overcook chicken to keep it tender
- Adjust sauce thickness by simmering longer
- Use freshly grated Parmesan for better texture
