Cajun Cabbage Jambalaya – Spicy, One-Pot Southern Comfort

  • 1 tablespoon olive oil

  • 12 oz smoked sausage, sliced

  • 1 pound boneless, skinless chicken thighs or breasts, diced

  • 1 small onion, chopped

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 3 cloves garlic, minced

  • 1/2 head green cabbage, chopped

  • 1 can (14.5 oz) diced tomatoes, drained

  • 1 cup chicken broth

  • 2 teaspoons Cajun seasoning

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon cayenne pepper (optional)

  • Salt and black pepper to taste

  • Fresh parsley for garnish


Instructions

Step 1: Brown the Sausage

Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned. Remove and set aside.

Step 2: Cook the Chicken

In the same skillet, add diced chicken. Season lightly with salt and pepper. Cook until browned and cooked through. Remove and set aside with sausage.

Step 3: Sauté Vegetables

Add onion and bell peppers to the skillet. Cook for 3–4 minutes until softened. Add garlic and cook for 30 seconds.

Step 4: Add Cabbage

Stir in chopped cabbage and cook for 5–7 minutes until slightly softened.

Step 5: Build Flavor

Add diced tomatoes, chicken broth, Cajun seasoning, smoked paprika, and cayenne pepper. Stir well.

Step 6: Combine Proteins

Return sausage and chicken to the skillet. Mix thoroughly.

Step 7: Simmer

Cover and cook for 10–15 minutes, stirring occasionally, until cabbage is tender and flavors are blended.

Step 8: Adjust Seasoning

Taste and adjust salt or spice level as needed.

Step 9: Garnish and Serve

 

Sprinkle with fresh parsley and serve hot.

Notes

  • Do not overcook cabbage; it should remain slightly tender.

  • Use smoked sausage for authentic flavor.

  • Adjust Cajun seasoning to your spice tolerance.

 

  • Stir occasionally to prevent sticking.
