  • Author: twiza amys

Ingredients

Scale

For the Chicken Tenders:

  • pounds chicken tenders

  • 1 cup breadcrumbs or panko

  • ½ cup grated Parmesan cheese

  • 1 packet ranch seasoning mix

  • 2 eggs

  • 2 tablespoons milk

  • 1 tablespoon olive oil

For the Garlic Mashed Potatoes:

  • 2 pounds russet or Yukon Gold potatoes, peeled and cubed

  • 4 tablespoons butter

  • ½ cup milk or heavy cream

  • 3 cloves garlic, minced

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Optional garnish: chopped parsley

Instructions

Step 1:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2:

In a bowl, combine breadcrumbs, Parmesan cheese, and ranch seasoning.

Step 3:

In another bowl, whisk eggs with milk. Dip each chicken tender into the egg mixture, then coat with the breadcrumb mixture.

Step 4:

Place chicken tenders on the prepared baking sheet and drizzle lightly with olive oil. Bake for 18–20 minutes until golden and cooked through.

Step 5:

Meanwhile, boil potatoes in salted water for 15–18 minutes until tender. Drain, mash with butter, garlic, milk, salt, and pepper until smooth.

Notes

Use panko breadcrumbs for extra crispiness. They create a lighter, crunchier crust than regular breadcrumbs.
