Apple Fritter Batter

2 cups all-purpose flour

½ cup granulated sugar

¼ cup brown sugar, packed

2 teaspoons baking powder

1 ½ teaspoons ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

2 large eggs

½ cup milk

¼ cup melted butter or vegetable oil

1 teaspoon vanilla extract

2 cups apples, peeled and finely diced
Glaze

1 cup powdered sugar

2–3 tablespoons milk

½ teaspoon vanilla extract
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt until evenly combined.
In a separate bowl, whisk eggs, milk, melted butter (or oil), and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients and stir just until combined. Fold in the diced apples gently, ensuring they are evenly distributed throughout the batter.
Drop mounds of batter onto the prepared baking sheet, shaping slightly if needed. Bake for 14–16 minutes, or until golden and a toothpick inserted comes out clean. Remove from oven and allow to cool slightly.

Dice apples small for even baking and better texture.
